Corn flour
Corn flour is great for anyone on a diet. This is one of the few low-allergenic foods considered safe for those with celiac disease. After all, corn protein does not contain gluten and is easily absorbed by the body.
The flour retains the corn's natural sunny yellow color and has a light nutty flavor. You can appreciate its special taste by trying dishes such as malay - a traditional and well known pie from Moldova, mchadi - traditional Georgian flatbreads, nachos - a favorite Mexican snack. It is also often found in traditional pastry and bakery recipes as a "secret ingredient".
Three facts about organic corn flour:
- The product is one of the few types of milled products that does not contain gluten. This explains the low stickiness of the dough made with corn flour. The finished baked goods are crumbly and aromatic.
- Corn flour is rich in vitamins A, E, B1 and B2. It also contains a sufficient content of potassium, phosphorus, magnesium, calcium and iron. Its use helps prevent cardiovascular diseases, normalize bowel function and strengthen the immune system.
- To prevent the organic flour from becoming weathered and to protect it from pests, it should be stored in a dark, cool place in an airtight container.

Chemical composition of a product is characterized by calories, proteins, fats, carbohydrates, dietary fibres and vitamins. For organic products, these parameters significantly depend on natural factors – air temperature and precipitation during vegetational season, dry or rainy season, geographic latitude and longitude of cultivation, botanical grain varieties, and soil type. It is impossible to foresee all the factors, so these values are average and indicative only.
