Semolina
Semolina is germs of organic wheat grains. It is made by removing bran and grain endosperms while processing wheat into flour. Semolina composition is extremely rich and varied. Cottage Cheese Fritters
Directions: Soften cottage cheese with a fork. The lower fat content in cottage cheese is, the less fritters will fall apart, and it is not necessary to add binders, such as flour. Add yolk, semolina and sugar. Mix thoroughly the cottage cheese mixture, tamp and draw it for 30-40 minutes at room temperature. Form fritters and roll them in flour optionally. Fry cottage cheese fritters on medium fire in melted butter until tender.
Semolina Pudding with Chocolate and Bananas
Directions: Peel a ripe banana and puree it. Add almond milk, honey, oil and stir mass again until smooth. Sift cocoa into the puree. Pour the puree into a saucepan and bring to a boil, stirring it constantly. Remove the boiled mass from the fire and add semolina slowly, by pouring in a thin stream, stirring and boiling it in the hot mass. Mash the puree with a blender and make sure that there are no lumps. Lay the pudding mass out in clear bowls, pour melted chocolate on top, cover with cling film and place in a refrigerator until solid. When serving, dress the dish with whipped cream, mint leaf and berries.
